Sleeping Beauty Mountains

Upon her passing, the legend recounts, the wife of tea merchant Yang Guilu became transformed into Sleeping Beauty Mountain. After long awaiting his return from Huoshan where he traveled to purchase the extraordinary tea, Yang’s wife set out to find him. Arriving there she learned of his untimely death from heart failure. Devastated at first, she became resolute to dedicate her life to her husband, to tea, and to the mountain. She gave birth to paternal twins, and spent the next four decades raising her family, and refining the method of growing and producing Huoshan Huangya…. Each spring, during the tea harvest, one can hear the cries of the local birds that nest only on the heart portion of Sleeping Beauty Mountain…“Yang Guilu…Yang Guilu…” echoing through the Sleeping Beauty Mountains of Huoshan County…night and day only ending with the tea season.

Deep Steamed Japanese Green Tea

Savory is the way to describe the rich flavor of Deep Steamed Japanese Tea.

  • Puddle the tea on your tongue, and hold it for ten seconds or so.
  • Press your tongue against the roof of your mouth…feel the tea’s thickness.
  • Observe the slightly clouded green tea broth that results from the deep steam process.
  • Notice the savory richness and plesant vegetal flavor.
  • After several sips lick your lips to pick up the seaweed like flavor (Umami) deposited there from the previous sips.
  • Deep steaming breaks down the plant fiber more than normal steaming. Visually, the tea has numerous small particles compared to normal Sencha.
  • Steaming the “rough tea” for 2-3 times as long as normal Sencha produces a slightly lighter aroma, but a more robust and rich flavor.
